Baking

Sunday afternoon: I figured I should put my free time to use -- Bill took the two biggest boys to the Awana Grand Prix. Joshua wanted to make a volcano car, and I think he did a great job! He was disappointed that he didn't win anything. His car didn't make it to the finish line (which I wasn't surprised at), but he was hoping to win most creative car. I guess if we wanted him to win, we should have done it for him because according to Bill, the winner's car had to have been made by the parents. I didn't see the winner's car, but here is Joshua's. I think it's rather creative. Can you see the lava running down the "mountain"?

Anyhow, back to baking...the reason for this post.....I decided to use my free time to bake food for Bill. Since he is gone during the week, I am trying to make meals to send up with him to help save money and keep him a bit more healthy than eating out all the time! I've tried a few new main dish recipes, but Sunday I decided to make some cookies and muffins. I had a bag of Toffee bits laying around that I had purchased for another recipe, but then realized I needed the other kind. So I decided to try the recipe on the back of the bag. I can't recall the exact name of the recipe, but me, oh, my -- those were GOOD cookies! I kept a few at home for me, but did send Bill up with most of them.

And then I made some yummy zucchini muffins. My sister gave me the recipe. I'll try to post it later (can't copy/paste for some reason in my blog anymore). The boys love them and they are more healthy than other muffins -- shredded zucchini and carrots in them.

Maybe another day when I have quietness in my house, I'll get to scrapbooking, but Sunday was a baking day. And I must say, it was nice to see all the fruits of my labor on the table -- not to mention enjoy the delicious smells in the house!
